Texas Tapas Night

My food cohort Jodi, who you've been reading about in my past several posts, left this past Sunday for a trip of a lifetime. For the summer (well winter), she'll be traveling around a few countries in South America to live her dream, hiking Machu Picchu, learning to cook from Peruvian grandmothers, and experiencing a whole new hemisphere of food. I couldn't be happier for her, and I expect lots of pictures and inspiration for One Last Bite when she returns.

But before she left, we made sure to squeeze in one last cocktail party in honor of her non-going away going away. We both love snack style dinners so we decided on a Texas Tapas Night theme. We assembled a simple menu from fridge staples and a short grocery list. Our appetizers were the perfect accompaniment to the sunset on the deck. By the end of the night, nothing was left on the buffet and everyone had wished Jodi bon voyage.

Here's our menu in pictures.

Grape Tomato, Havarti, and Green Olive Antipasti Skewers

Salami, Sharp Cheddar, & Green Olive Antipasti Skewers

Calabacita Quiche with Boggy Creek Squash, Roasted Poblanos, and Corn

Cheesy Bacon Pie with Roasted Red Peppers

Sriracha Hummus with Toasted Pita Chips

Vegan Banana Bread, Take 2 (Taste Tester Approved)

Red Velvet Cupcakes with Cream Cheese Frosting, Jodi's favorite
